As you are beginning to realise, sushi and ramen are not the only cuisines in Japan. In fact, it is in the food that the locals eat that the best of Japanese cuisine is concentrated. However, language barriers make it difficult for many foreign visitors to reach that level of such a cuisine. So I thought that getting the restaurant menu in advance, choosing the dishes, documenting the order form and bringing it to the restaurant would solve the problem. My dream is to create a huge database of restaurants in the future, with a line-up of each restaurant’s culinary menu, so that orders can be finalised before visiting that restaurant, helping foreign visitors to enjoy true Japanese cuisine.

In 2026, there are still Japanese restaurants whose menus are only in Japanese. Therefore, someone has to take translate the menu into English. In my opinion, this is necessary in terms of the culture of hospitality.
